Arabic Coffee is a general name that refers to the way coffee is prepared in many Arab countries throughout the Middle East. Sometime cardamom or saffron are added to give it a golden color. This method is popular in the Arab states of the Persian Gulf. Plain coffee (qahwa saada) is more bitter and popular in the Levant countries. Arab coffee has a special pot called dallah and the coffee cups are small and have no handle. The portions are very small, covering the bottom of the cup. When served in restaurants, by specially clad waiters called gahwa, it may be offeerd as a compliment of the house, and at home it is a sign that the guest is welcome.
The trees that produce Arabic coffee, found in Syrian areas, can measure over nine feet, where trees in South America grow only 3 feet in height. The leaves of the Arabic coffee plant are also comparatively large.
Arabic coffee is always served in special small cups and traditionally the quantity poured should be enough for two to three sips. Part of the tradition is to drink it immediately.
To have more, the cup is handed back normally and this automatically indicates to the server that you wish to have a refill. But if you've had enough, then you gently swivel the empty cup from side to side while returning the cup to the server thereby indicating server that you do not prefer to have more.
